At the Green Farmers Market in Lincoln Park Saturday I met a new vegetable.
Red asparagus. Mick Klug of Mick Klug Farms in St.. Joseph, Michigan told me they were “really Purple Passion asparagus. And I’m not kidding!”
I asked if the color changed, he wasn’t sure, but he said, “they are sweeter.”
Sweet purple passion, hmmmm…with bacon.
Ryan says “Everything’s better with bacon.”
Their rich crimson color cried for bacon with its maroon threads…but needed the burgundy color of balsamic— because after I cooked them—they turned green!
