“Adagio. Garlic’s not a vegetable.” And it’s not a root either; it’s a bulb. I found the whirling garlic scapes here in Lincoln Park, at Randy Roberts’ Majestic Nursery Inc. stand.
The lovely way they were twirled, the gradation of green, the texture…got me. I think, Just hang them up. They’re so pretty. Garlic scapes?
A scape is a flower stalk that grows directly from the base of the plant, without leaves, like a jonquil.
Young baby garlics. Can you eat them? Randy told me his wife Gayle has recipes for garlic scapes. I emailed her. She sent them to me.
Garlic Scape Pesto

Gayle Roberts says,”The buds and the little skinny pointy part above the buds, are not as nice texture-wise.” I cut off the buds and slice the garlic scapes on the diagonal. They cut easier.
Drizzle the extra-virgin-olive oil into the mixture of garlic scapes, toasted pine nuts, and freshly grated Parmesan cheese as you puree.
A pesto worthy of a “Condiment Queen.” And be sure to share it with your garlic loving friends.
