Corky's Pumpkin Bars

Here is the recipe for the pumpkin bars from Corky. Thanks Corky for sending it!

2 cups pumpkin
4 eggs – beaten
1 cup oil
2 cups all purpose flour
1 cup brown sugar, packed
1 cup white sugar
1/4 tsp salt
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
1/2  tsp cloves      (opt) did not use
1/2 tsp nutmeg

Blend the pumpkin, eggs and oil in a mixing bowl.  Blend all the dry ingredients together, then fold into  the pumpkin.  Pour onto a greased large square cake pan
(still don’t know the size, but I used a 9×13, I think they mean a 1/2 sheet pan)
Bake in a preheated 350 deg. oven for 35 min  (in the 9x13pan) but in the large cake pan it says 20 – 25 min.
Remove from oven and cool to room temp before frosting with cream cheese frosting.

Cream cheese Frosting
1 8oz package of cream cheese
1 stick of butter
1 # of confectioners’ sugar
1/2 tsp vanilla

Cream the cheese with the butter and vanilla,  add the sugar in small amounts, if it is to stiff, add a very small amount of cream or milk.  I added the toasted almonds but the recipe does not call for it.

They are delicious!
