At the CHILI COOK-OFF I asked Elaine if she would share their Prize Winning Chili recipe.

Elaine and John Sasaki’s Prize Winning Chili
2 ½ pounds lean ground beef (85% or leaner)
1 pound pulled smoked pork (Shoulder preferably)
2 large onions finely chopped
3 gloves garlic minced
3-4 jalapeno pepper finely chopped (seeds and all)
3 tablespoons olive oil
64 oz. tomato sauce
1 bottle (12 oz) dark beer (porter or stout)
1 small can tomato paste
½ cup light brown sugar
1 tablespoon ground cumin
1 tablespoon cocoa
1 teaspoon oregano
1 teaspoon ground coriander
1 teaspoon salt
1 teaspoon red pepper flakes
1 teaspoon ground thyme
3 tablespoons chili powder
28 oz can red beans (small red or kidney) rinsed
1 can (15.5 oz) Brooks Hot Chili beans (DO NOT rinse)
Brown ground beef in deep pan/dutch oven and drain fat. Remove meat and set aside. Saute onion and garlic in olive oil in the same pan until translucent and then add ground beef back and heat through. Add beer and deglaze pan and then add all spices and cocoa to ground beef and stir thoroughly. Add tomato sauce, brown sugar and beans. Stir thoroughly to mix ingredients. Add paste and stir. Bring to a low boil and then lower heat to a low simmer for approximately 1 hour. Add tomato paste and pulled pork, stir and simmer for an additional 1 hour.
